Accidental Spice cookies, or I Can't believe They're Not Pumpkin Cookies,

I found this Pumpkin Cookie recipe that I love. It has a cream cheese icing that is perfect not just on the cookies but for use on cakes too.
But One year while I was making them I forgot to add the pumpkin. The resulting cookies turned out are very crunchy and delicious. I call then Accidental Spice cookies, My daughter calls them, I Can't believe They're Not Pumpkin Cookies, But my friends call them addicting.
This is my Spice cookie recipe.

Preheat oven to 350°.

In small mixing bowl combine:
2 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
2 teaspoon Pumpkin Pie Spice

(If you do not have pumpkin pie spice you can use, 1 teaspoon cinnamon,
½ teaspoon nutmeg,½ teaspoon ginger
)

Set aside.

In large mixing bowl beat 1 cup softened butter for 1 minute. Add:
¾ cup granulated sugar
¾ dark brown sugar (packed)

Beat until fluffy and then add:
1 egg
2 teaspoons vanilla

Beat well, then add dry ingredients and mix until well blended.


Drop by teaspoonfuls 2 inches apart onto greased cookie sheet.

Bake at 350° 8 to 10 minutes.

Cool on baking sheet for 2 minutes before transferring to wire rack to finish cooling.


I do Have a friend who is working on figuring out how to make this a weight watchers friendly cookie recipe. when she does I hope to be able to put it up here too.
